Ingredients: | 1 medium Cauliflower, cut into florets

| Potatoes - 250g diced
| |
| 120g frozen Peas
| |
| 2 tbsps Sunflower/Vegetable Oil
| |
| 2 tomatoes, diced
| |
| Salt to taste
| |
| Green Chillies - 1 tsp chopped
| |
| Garlic - 2 tsp crushed
| |
| Pinch of Ginger - 1½ tsp chopped
| |
| Fresh Coriander - handful
| |
| Curry Cuisine - Aloo Gobi Matar - 1 pack
| |
Method: | • Place the Oil in a pan and heat. Add the Cauliflower and Potatoes and stir. Keep over a medium heat.
• Add the Garlic, Ginger, Green Chillies and Curry Cuisine Aloo Gobi Matar Spice Mix, stir and cook for a few minutes.
• Add the fresh Tomatoes, Coriander and Peas, and stir.
• Cover and cook over a low heat until the vegetables are cooked (15-20 minutes).
Serve with Chapattis or as a side dish. |
