Amoy Crushed Yellow Bean Sauce is made in the traditional way by crushing fermented soybeans and blending them with Wheat Flour, Sugar and Soy Sauce. It is widely used everyday cooking throughout China-particularly in the Northern (Peking) style of cooking. Other spices and seasonings such as Garlic, Pepper, Ginger or Chilli etc can be added to this basic sauce to form a variety of sauces.
Ingredients:
Fermented Salted Soyabean (Soyabean 19%, Wheat flour, Salt, Water), Soy Sauce, Sugar, Water, Colour: E150a.
Recipe Suggestion:
Pork in Yellow Bean Sauce (serves 2)
200g Pork, cut into strips
1 tbsp cooking oil
1 small onion sliced
100g Amoy Baby Corn, cut into quarters
50g mange tout, cut in half
2 tbsp Amoy Yellow Bean Sauce
3 tbsp water.
1) Heat the cooking oil in a wok and stir-fry the pork for 2 minutes.
2) Add the onion and fry for a further 2 minutes.
3) Stir in the remaining ingredients and cook until the pork is completely cooked (approx. 2-3 minutes).
Serve on a bed of rice or Amoy Egg Noodles.
