Recipe for Thai Coconut Milk Ice Cream

1750ml Aroy-D Coconut Milk
225g Sugar
240ml Water

• Boil and dissolve the sugar in the water. Filter by pouring through a fine sieve.

• Return to the pan and bring back to the boil, stirring until the syrup becomes sticky. Remove from heat and leave to cool.

• Mix the coconut milk and syrup together and churn in an ice-cream maker until frozen.

Ingredients: Coconut Extract 60%, Water.

Store at room temperature. If product hardens in cooler climates, place in a hot water bath for 5-10 minutes, stirring occasionally. Once opened, refrigerate for up to 2 days.
