Carrot Raita is a tasty coolant - this can be made more exciting if it's your own home grown veggie. Be assured for the rewarding comments!

Makes:

2 cups

Preparation Time:

10 minutes.

Cooking Time:

less than 5 minutes

Ingredients:

Grated Carrot - 1 cup
 
 Plain smooth Yogurt - 2 cups 
 Oil - 1 tbsp 
 Mustard Seeds - 1 tsp  
 Cumin Seeds - 1 tsp  
 Green Chillies chopped - 1  
 Salt to taste  
 Finely chopped Cilantro (Coriander Leaves) for garnishing.
 

Method:

• Place the Carrot in a bowl.

• Heat Oil in a pan; add Mustard Seeds, Cumin Seeds and Green Chillies. Add this tempering to the grated Carrot.

• Add the beaten Yogurt, Salt and mix well.

• Garnish with Cilantro (Coriander Leaves) and serve chilled.
