Falafel is one of the most popular foods from the Middle East. Originally it was the food of the caravaneers on their long desert journeys.
It is nutritious, simple to prepare and full of flavour. Small falafel patties are served inside pitta bread with fresh greens topped with delicious sesame tahini dressing.
Directions:
Serves 4 - 6 (24 patties)
• Combine Casbah Falafel Mix with 1 cup cold water and let stand for 10 minutes.
• Heat vegetable oil in a deep fryer or skillet, to between 350 and 375, so patties fry vigorously.
• Form small patties or balls, using 2 spoons or a melon baller. Fry patties for 1 minute on each side until brown and crisp.
• Drain patties on kitchen paper and serve hot.
Directions for Cooking without Oil:
• Make patties as above but press to 1cm thick rounds, then cook covered on a non-stick griddle or skillet over a medium heat, for 3 minutes on each side.
• Alternatively, place patties on a non-stick baking tray and bake for 8-10 minutes on each side, until lightly brown, in an oven pre-heated to 375.
Serving Suggestions:
• Falafal Burgers serve cooked falafals in a burger bun, with your favourite condiments.
• Falafal Pockets cut pitta breads in half, fill with 3 patties, tomato & cucumber, topped with Tahini or yogurt sauce.
For Yogurt Sauce:
Blend 2 cups yogurt or sour cream, ½ chopped cucumber, 2 tbsp finely chopped onion,1 tsp dry mint, ½ salt and 1 crushed garlic clove.
For Tahini Sauce: Blend together 1 cup tahini, ¾ cup water, ½ tsp salt, juice 2 lemons, 1 crushed garlic clove and 1 tbsp chopped parsley.
