Chicken Tikka

Chicken Tikka is one of the most popular meat dishes in british restaurants today. Best cooked in a Tandoor Oven, but it is possible to get excellent results in a gas or electric oven...

Serves:

4

Preparation Time:

15 minutes.

Cooking Time:

10 minutes.

Ingredients:

1 kg skinned Chicken Breasts
 
  Juice of 1 lime  
  (For the marinade):  
  2 tbsp Olive Oil  
  2 tsp Garlic Paste  
  1 tsp Ginger Paste  
  150ml Natural Yoghurt  
  1/2 tsp Chilli Powder (or to taste)  
  1/2 tsp Ground Cumin  
  1 tsp Ground Coriander  
  1/2 tsp Ground Garam Masala  
  1/2 tsp Salt  
  2 tbsp Lemon Juice  
  1 tbsp Fresh Coriander  
  1 Small Onion Peeled and Chopped  
  1/4 tsp Red or Yellow food colouring (optional)  

Instructions:

1. Put all of the ingredients for the marinade into a blender and blend until completely smooth

2. Cut the Chicken Breasts into 1" cubes and place in a bowl

3. Cover the chicken with the blended ingredients and mix thoroughly. Use a fork to pierce the chicken pieces in several places so the marinade penetrates deep down (note the fork holes will not be visible when cooked)

5. Cover with cling film and refrigerate overnight

Either:

6a. Place chicken pieces on a rack in an oven tray in a preheated oven (Gas mark 6) and cook for around 8-10 minutes or until chicken is cooked

Or:

6b. Put chicken pieces on a skewer and cook, turning frequently, under a preheated grill for 8-10 minutes or until chicken is cooked

7. Remove from heat and sprinkle lime juice on chicken.


Serving Suggestion:

To increase the wonderful aroma of Chicken Tikka at the dinner table serve the Chicken Tikka pieces on a preheated Sizzle Platter and garnish with 1-tbsp melted butter ghee with some fine slices of onion...


Serving ideas:

Serve with Fresh Naan breads or Rice.
