From the imperial palaces of the Han Emperors in China to roadside carts in India... Hakka Noodles have come a long way!

In the early 20th century, thousands of Chinese Hakka people settled in several Indian cities and created little 'China Towns'. One such 'China Town' still exists in Kolkata, still bustling with life.

The settlers assimilated many Indian spices into their food and virtually created a new cuisine called Hakka Chinese, which gave birth to dishes like Veg Manchurian, Paneer Chilli, Chicken Pakora, Manchow and Sweet Corn Soup.

They also shared the ancient Hakka tradition of making noodles and now you too can enjoy the Han Emperors' beloved noodles.
Instructions to prepare the Noodles:

• Boil 10 cups water in a large pan, let the water bubble.
• Add the noodles and boil for 2-3 minutes. The noodles should be Al Dente (partially cooked) or slightly Kachcha.
• Drain the noodles and rinse under running water. Spread on a flat surface and toss in 1tsp oil to prevent sticking. Then proceed with your chosen dish...

Chicken Schezwan Noodles

1 pack Ching's Secret Egg Hakka Noodles
1 boneless chicken breast, boiled and shredded
40g Ching's Secret Schezwan Chutney
1 carrot, julienned
1 spring onion, chopped
2 tbsp oil
Salt to taste

• Cook the noodles as above.
• Heat oil in a frying pan and stir fry the shredded chicken for 1 minute. Then add the vegetables and stir fry for another minute.
• Add the noodles and the chutney and sprinkle with 1-2 tsp water.
• Stir fry for 2-3 minutes
• Season to taste and serve hot, garnished with spring onion.
Ingredients: Wheat Flour, Salt, Refined Palm Oil, Guar Gum (Stabilising Agent E412), Sodium Polyphosphate (Emulsifying Agent E452(i)), Sodium Carbonate (Raising Agent E500(i)), Egg Powder, Potassium Carbonate (Acidity Regulator E501(i), Turmeric.
