Cooking Instructions:

• Wash White Kidney Beans in cold water. Put in a saucepan, cover with water, bring to the boil and then simmer until cooked for approximately 2 hours.

• Add Salt, Pepper, Cypressa Lemon Dressing and Cypressa Olive Oil to taste or your favourite salad dressing.

Can be used as a main meal vegetable, a vegetarian dish, included in Salads or added to Soups and Stews. If Pinto Beans are soaked overnight, then cooking will be quicker.

Serving Suggestion: Yiahni (with tomatoes)

• Cook as described above but when the White Kidney Beans are partly cooked, add 1 finely chopped medium Onion.

• When cooked add 2 or 3 tablespoons cooking Oil to taste and either a 225g tin of peeled Tomatoes or half a tablespoon of Tomato Puree, Salt, Pepper to taste and ½ a tablespoon of Lemon Juice if preferred.

• Add Salt, Pepper, Cypressa Lemon Dressing and Cypressa Olive Oil to taste or your favourite salad dressing.

Warning: Beans should be soaked for 8 hours, then boiled rapidly for 10 minutes and cooked until soft, otherwise they may cause stomach upsets.
