Coconut Milk - Dunns River

Dunn's River coconut Milk is made from pressing the meat of fresh coconuts after the shell, husk and juice have been removed. The juice, whilst making a refreshing drink, is never used for cooking.

A vital ingredient in the cuisines of the Caribbean, India and South East Asia, Coconut Milk adds a subtle, mellow flavour to curries and other dishes for which a coconut note is required.

Recipe suggestion: Caribbean Chicken Curry
Serves 4

Ingredients:
1½ cup Double Cream
4 Chicken Breasts
½ tbsp Jamaican Curry Seasoning/Powder
400ml Dunn's River Coconut Milk
1 tbsp Brown Sugar
Dash Cooking Oil

• Marinate the chicken breasts in the Jamaican Curry Seasoning/Powder.

• Heat the oil and pan-fry the chicken breasts on both sides.

• Combine all the other ingredients in a saucepan, heat gently and stir until dissolved.

• Add the mixture to the chicken, cover and simmer gently for 3 minutes.

• Serve with steamed rice.

Ingredients: Coconut Meat Extract, Water.

Shake can before use. Once opened, refrigerate for up to 4 days.
