Punjabi Tinda in Brine (cut) - East end

Ingredients:
Punjabi Tinda (Indian Baby Pumpkin), Water, Salt, Citric Acid.

Produce of India.

Recipe Suggestion:-

For a delicious and authentic dish using East End Punjabi Tinda:

1 tin Punjabi Tinda, drained and rinsed in cold water
4 tbsp vegetable oil
1 onion, chopped
½ tsp chilli powder
1 tsp turmeric powder
1 tsp coriander powder
8 oz tin tomatoes, peeled and chopped
1 tbsp garam masala
Salt to taste
Coriander leaves to garnish

Heat the oil in a pan and fry the onions until golden brown.

Add the tomatoes, chilli, coriander, turmeric powder and salt.

Stir and fry on a medium heat until the mixture is well blended and the oil has separated.

Add the Tinda, cover and cook on a low heat for 10-15 minutes, adding a little water if the mixture dries to achieve the desired consistency.

Sprinkle over the garam masala powder, stir and garnish with green coriander leaves.

Serve with naan bread or rice.
