Biryani Masala - Eastern

Ingredients: Coriander, Bay Leaf, Chilly, Black Pepper, Turmeric, Aniseed, Cinnamon, Cardamom, Salt, Cloves, Nutmeg, Cumin.

Recipe Idea: Eastern Chicken Biriyani

1kg Chicken
1kg Biryani Rice
50g Eastern Biriyani Masala
500g Onion
2 Bulbs Garlic
2 Pieces Ginger
10 Green Chillies (or to taste)
3 Red Tomatoes (sliced)
Coriander Leaf, Curry Leaf & Mint Leaf (as required) – all chopped
Cashew & Kaskas Paste (as required)
Salt to taste.
1 cup of Ghee

Preparation:

1) Cut and clean Chicken.

2) Grind the Garlic, Ginger and Green Chillies to a paste.

3) Fry the onions in the ghee then add the pastes and the sliced ingredients.

4) Add the Eastern Biriyani Masala and the chicken pieces and cook.

5) Wash and soak the rice for 15 minutes. Fry it in ghee till dry. Add water and boil.

6) Mix the rice and chicken and pour ghee over it. Close the lid and bake for 30 minutes.
