Ingredients: Chilli, Dry Ginger, Mustard, Fenugreek, Salt, Turmeric, Sugar, Asafoetida.

Recipe Idea: Eastern Mango Pickle.

8 tbsp Eastern Pickle Powder
2kg Green Mangoes chopped into small pieces
Sliced Ginger (as required)
Garlic Cloves (as requried)
Green Chillies (as requried)
Curry Leaves (as requried)
Mustard Seeds (as requried)
Gingili Oil (as requried)
Vinegar (as requried)
Salt to Taste

Preparation:

1) Add Eastern Pickle Powder and Salt to Chopped Mangoes. Mix well and set aside for 10-minutes.

2) Heat the oil and crackle the Mustard Seeds and sauté Ginger, Garlic, Chillies and Curry Leaves. Add the Mango and mix well.

3) Turn off the flame and add Vinegar to taste.

The pickle can be used from the following day.

Pickles from Salted Tender Mango, Salted Lemon, Steamed Amla, Bitter Gourd (Karela), Garlic and Carrot can all be made in the same way.
