Butter Chicken Curry Paste - Ferns

Recipe idea: Rich Butter Chicken

Ingredients:

500g Boneless Chicken Chunks
4 tsp Ferns' Butter Chicken Paste
1/2 Cup Yoghurt
50g Butter
200ml Tomato Puree
2 tsp Sugar
200ml Fresh Cream
1 tsp Dried Fenugreek Leaves (Kasuri Methi) - Optional

Method:

1. Marinate chicken chunks in 1tsp Ferns' Butter Chicken Curry Paste and yoghurt for minimum 2-4 hours - preferably overnight.

2. Grill chicken Chunks under a hot grill until cooked.

3. Melt the butter in a pan. Add the remaining Ferns' Butter Chicken Curry Paste and fry for 2-minutes. Add the tomato puree, 1 cup water and sugar to taste. Allow to boil and simmer for 1/2 an hour till fat seperates. Add more water, if necessary.

4. Add the cream, keeping a little aside for garnish. Add the dried fenugreek leaves and grilled chicken chunks with salt to taste.

5. Heat through and serve garnished with a swirl of cream

Serve hot with boiled rice or a bread of your choice.
