Fried Rice with Spicy Beans |

Fried Rice with Spicy Beans is a twist to the normal Fried Rice. This is a spicy version of the Rice with some crunchy Sweetcorns and Beans. You can serve this satisfying meal with some Raita. |

Ingredients: |
Oil - 3 tbsp

Onions finely chopped - 1

Basmati Rice - 225g
|
|
| |
Pepper diced - 1
|
|
| |
Chilli Powder - 1 tsp
|
|
| |
Salt to taste
|
|
| |
Boiling Water - 600ml
|
|
| |
Canned Sweetcorn kernels - 100g
|
|
| |
Canned Red Kidney Beans drained and rinsed - 225g
|
|
| |
Coriander Leaves / Cilantro chopped for garnishing
|

Method: |
• Heat Oil in a large pan.
• Add the Onions and stir fry over a medium heat for about 2 minutes.
• Then reduced the heat to low and stir fry the Peppers, Rice and Chilli Powder for a minute.
• Pour the boiling Water, add some Salt and mix well.
• Bring this to boil and then reduce the heat to low and cook for 15 minutes or until the Rice is cooked.
• Stir in the sweetcorn and Kidney Beans. Mix well.
• Garnish with some Coriander Leaves / Cilantro. |
