A flavourful dish of winter vegetables with baked chick pea flour fritters and greens.
Undhiu is speciality dish from the western Indian state of Gujarat. Though Gujarati food changes strongly in character as one moves from the coastal regions to the drier, semi-arid areas in the northern or the western parts of the state, each province has its own special preparation of this favourite.
A large variety of winter vegetables are skillfully cpmbined with baked chick pea flour fritters and greens and then garnished with freshly grated coconut. the spices are unique and the result fabulous. Undhiu is best served chilled with the traditional white rice and hot chapatis.
To heat:
Stove top: Immerse the pouch in boiling water for 3-5 minutes. Remove, cut open, stir and serve.
Microwave oven: Empty the contents of the pack in an oven bowl. cover and heat for 1-2 minutes. Stir and serve.
Tip: Garnish with chopped cilantro.
