Sri Lankan Vegetable Curry

Ingredients

500g chopped vegetables of your choice
1 tbsp of House of Ceylon curry paste
175ml Coconut milk

Serves 2

• Par boil the vegetables and drain.
• Add 175ml coconut milk and 1 tbsp of House of Ceylon curry paste, and cook, uncovered, until the sauce thickens and the vegetables are tender.
• Serve with steamed rice.
Ingredients: Ground Coriander Seeds, Vegetable Oil, Cumin, Red Onion, Salt, Fenugreek, Rice Flour, Sweet Cumin, Indian Mustard, Turmeric, Cinnamon, Curry Leaf, Pandan Leaves.

Once opened, refrigerate and use within 3 months.
