Patak's Curry Pastes make excellent marinades, used on their own or blended 50:50 with plain yogurt. Marinate meat then bake, BBQ or grill.

Suggested recipe: Masala Chicken Curry

Serves 2

Ingredients:
2 tbsp Vegetable Oil
1 Medium Onion, Diced
60g Patak's Garam Masala Curry Paste
250g Diced Chicken Breast
200g Fresh or Canned Chopped Tomatoes
2-3 Fresh Curry Leaves (optional)
2 tsp Fresh Chopped Coriander Leaf (optional)
½tsp Coarse Ground Black Pepper
Sugar to Taste

Method:

• In a medium sized pan, gently fry the onions in oil until golden.

• Stir in Patak's Garam Masala Curry Paste, add tomatoes, sugar and half of the chopped coriander. Mix well.

• Add a little water if needed, cover pan and simmer on a low heat for 10mins.

• Add fish steaks and spoon over sauce. Cover and cook for a further 10-15mins on a low heat.

• Serve garnished with the remaining chopped coriander leaf and black pepper.

• Equally delicious with chicken, beef, lamb or vegetables.

Meena Pathak's Tip: Use Patak's Garam Masala Paste to add heat and flavour to any Indian dish. Simply add a teaspoon of paste towards the end of cooking.
