Rogan Josh Mix - Shan

50g

A mix for Kashmiri-style meat curry.

Recipe:

1kg cubed beef/chicken/mutton
1 diced tomato
1/2 diced onion
500g natural yogurt
200g milk
100g ghee or oil
175g butter
Packet Shan rogan Josh mix

1. Heat the ghee and stir fry the meat until browned.
2. Add the onions and tomatoes and stir fry for 5 minutes. Add the yogurt and cook, stirring constantly, until the ghee/oil separates from the sauce.
3. Add Shan Rogan Josh mix and fry for a few minutes.
4. Add 2 glasses of water and cook until the meat is tender.
5. Add the milk and stir fry for another few minutes.

Garnish with finely sliced tomatoes and serve with kulcha or plain naan breads.

Ingredients: Red chiili, salt, paprika, sugar, coriander, turmeric, ginger, black cumin, fennel, black pepper, cumin, green cardamom, brown cardamom, cinnamon, mace, nutmeg, clove.
