Green Cardamom is an essential spice in biryanis, pilaus and most Indian curries from Northern India. Its sweet pungent flavour and powerful aroma is used in many Indian sweet and savoury preparations. Brown Cardamoms have a deeper, earthier flavour and a nutty aroma and are used mainly in meat and vegetable dishes.
