Karimix Vindaloo Curry Paste is not or the faint-hearted: this fiery paste will infuse more than a little spice!

Use a marinade for meat or poultry, then BBQ, grill or bake.

Add a couple of teaspoons to your stir-fry for a delicious flavour.

Use to marinade haddock, with some thinly sliced lemongrass and bake.

Recipe for Vindaloo Curry

Serves 2-4 as a main course

60g Karimix Vindaloo Curry Paste
½ onion, diced
650g meat or pork, cubed
250ml tin chopped tomatoes
1 tbl vegetable oil
1 tbl white wine vinega
2 tps soy sauce
4 curry leaves (optional)

• Heat oil in a saucepan until hot.
• Add onions, Karimix Vindaloo Curry Paste. Fry for 10 minutes.
• Add meat or pork and stir until the cubes are well coated in the paste. Stir well for 10 minutes.
• Add chopped tomatoes and curry leaves. Stir well and bring to a boil.
• Reduce to a simmer. Add vinegar and soy sauce. Stir well. Add salt to taste.
• Add fish sauce, basil leaves and lemon juice. Stir well. Add salt to taste.
• Cover and simmer very gently for half an hour. Stir occasionally.
• Garnish with coriander and serve hot with rice and Karimix Mango Chutney as a condiment.
