Hot & Spicy Rice Sticks In Soup:
Serves 3
• Bring 1.25 litre water and one sachet Lee Kum Kee Sichuan Hot & Spicy Soup Base For Hot Pot to the boil.
• Add 170g shredded cooked chicken, 250g each of asparagus, canned bamboo shoots, carrot and baby corn (all sliced). Cook for about 3 minutes until done. Take out and keep warm.
• Add 450g rice sticks and heat through.
Put rice sticks and soup in 3 serving bowls. Arrange chicken and vegetables on top.
Hot And Spicy Chicken Salad With Bean Vermicelli Sheets:
Serves 4-6
• Cook 400g bean vermicelli sheet in boiling water according to packet instructions or until tender. Rinse with iced water and drain. Cut into thick strips.
• Put 75g shredded, cooked chicken, 120g shredded carrot, 120g shredded cucumber and bean vermicelli in a salad bowl.
• Prepare salad dressing by combining 1 tsp premium soy sauce, 1 ½ tbsps blended sesame oil and 3 tsp Lee Kum Lee Soup Base for Sichuan Hot & Spicy Hot Pot and mix well. Pour over the salad and serve cold.
