Moong Sprouts Stir Fry

Moong Sprouts Stir Fry is a snack loaded with proteins. Sprouts are stir fried with Onions + Tomatoes and flavoured lightly with some spices.

Moong Sprouts - 3 Cups
 Onions finely chopped - 1
 Tomato chopped - 1
 Oil - 1 tbsp
 Mustard Seeds - 1 tsp
 Urad Dal - 1 tsp
 Cumin Seeds - 1 tsp
 Asafoetida - ¼ tsp
 Few Curry Leaves
 Green Chillies slit - 2
 Ginger grated - ½ tsp
 Turmeric Powder - ½ tsp
 Coriander Powder - ½ tsp
 Cumin Powder - ½ tsp
 Red Chilli Powder - ½ tsp
 Salt to taste
 Coriander Leaves for garnishing
 Lemon juice - 2 tbsp


• Heat Oil in a pan, add Mustard Seeds and allow it to splutter.

• Then add the Urad Dal, Cumin Seeds, Curry Leaves and Asafoetida.

• Then add the Ginger, Green Chillies, Onions and fry for few minutes.

• Then add the Tomatoes and fry for few seconds.

• Next add the Turmeric, Cumin Powder, Coriander Powder and Red Chilli Powder and mix.

• Now add the Moong Sprouts along with 1/4 Cup of Water and Salt. Mix well.

• Cover and cook for about 5 minutes or until soft but not mushy.

• Take off from heat and garnish with Coriander Leaves / Cilantro and Lemon juice.

• Serve hot!
