Mushroom Masala is a spicy form of Mushrooms cooked in Tomato gravy with other spices. You can try this curry when your crisper is clean and empty or just left with minimal vegetables :-p...This can be served with Basmati Rice or any Indian bread.

Red Onions finely chopped - 1 Cup
 Tomato Puree - 1 Cup
 Mushrooms diced - 200gms
 Oil - 2 tbsp
 Cloves - 2
 Small Cinnamon stick - 1
 Green Chillies slit - 2 (Optional)
 Red Chilli Powder - 1 tsp
 Coriander Powder - 1 tsp
 Fresh Garlic paste - 1 tbsp
 Turmeric Powder - ¼ tsp
 Fresh Coriander Leaves / Cilantro chopped for garnishing


• Heat the Coconut Oil in a pan, add Cloves and Cinnamon and fry for few seconds.

• Then add Onions and saute for few minutes.

• Next add Garlic paste, Red Chilli Powder, Coriander Powder, Turmeric Powder and a bit of Water and mix well on low heat.

• When the masalas are fried well, add the Green Chillies and Tomato Puree.

• Then add the Mushroooms and Salt. Cook on low heat for about 5 minutes.

• Once done garnish with chopped Coriander Leaves or dried crushed Fenugreek Leaves and serve hot!
