Paneer Paratha or Cheese Paratha as the name indicates is a stuffed bread. Here the stuffing is cheese which can be spiced up or just leave it plain. This is a good brunch item. It tastes yum with ketchup, Pickle, Yogurt or any gravy side dish. |

Ingredients: | For the Dough

| Whole Wheat Flour - 1 Cup

| Plain Flour - ½ Cup

| Oil - 4 Tbsp
| |
| Salt - ½ tsp
| |
| Water - ¾ Cup (approximately)

| For the filling
| |
| Paneer grated - 1 Cup
| |
| Yogurt - 2 Tbsp
| |
| Salt - ½ tsp
| |
| Ginger grated - 1 Tbsp
| |
| Chilli flakes - ¼ tsp (optional)

| Coriander Leaves / Cilantro finely chopped - 2 Tbsp

Method: | • In a large bowl mix the Wheat flour, Plain flour, 1 Tbsp of Oil, Salt with your hands. Add little Water at a time and mix well to make a soft dough.
• Knead the dough well till it becomes smooth and soft. Cover and let it set aside for 15 minutes.
• Next in another bowl mix all the filling ingredients well with a spoon.
• Divide the dough and the Paneer into six equal portions.
• Roll the dough to about three inch circles and place the Paneer mixture in the centre.
• Then seal by pulling the edges of the rolled dough over the paneer to make a ball. Let this set for 3 - 4 minutes before rolling.
• Meanwhile heat the skillet on medium heat.
• Now light press the prepared ball and pat it with some dry Wheat flour.
• Keeping the sealed side up start rolling lightly into 6 inch circle.
• Whenever the dough becomes sticky sprinkle some more of Wheat flour on both sides and continue to roll.
• Transfer this rolled Paratha onto the hot skillet. In about 30 seconds the colour of the Paratha will change and it willl start to puff.
• At this time flip the Paratha over. Spread about a teaspoon of Oil on the Paratha.
• Again flip the Paratha and lightly press the areas where its puffing with a spatula so that it equally puffs on all areas.
• Flip again and press lightly on the Paratha to make sure that it is golden brown on all sides.
• Serve hot with Chutney or Pickle! |
