Fish Madras Curry (Serves 4)
• Blend 2 tbsp of Rajah Mixed Curry Powder with 3 tbsp of Water to make a paste. Combine with 2 tsp of ground Ginger, 2 tbsp of ground Garlic and 1 tsp of Salt.
• Heat 2 tbsp of oil, fry paste until fragrant and add 500ml of Tamarind Liquid. Bring to the boil and add 4 cod steaks to cook for 4 minutes.
• Add 3 tbsp of Coconut Milk, 1 tsp of sugar and simmer for 2 minutes. Ensure it is fully cooked before serving.
