Delhi's original Masala Seasoning for all Dahi Baras/Dahi Ballays/Dahi Phulkies/Lentil Dumplings in Yogurt

Recipe in Urdu, Hindi, Arabic & Bangla inside.

Recipe suggestion: Dahi Bara Chaat

Ingredients:

Dal Mash - soak 1 cup/200g moong dal for 3-4 hours in water then coarsely grind
Maida - ½ cup / 50g
Salt - ½ tsp
Soda Bicarbonate - 1 tsp
Oil/Ghee - 3 cups/500g for deep frying
Yogurt - 2½ cups/500g sieved through a Muslim cloth
Sugar - powder 1 tbsp, finely ground
Shan Dahi Bara Chaat Seasoning according to taste

Cooking Instructions:

• Add Maida, Sugar, Bicarbonate Soda and some water to Dal Mash. Mix to make a thick paste. Put to one side for 15 minutes.

• In hot oil fry the lentil dumpling/Dahi Baras until light golden. Then remove from the oil and put to one side to cool.

• Refry the lentil dumplings/Dahi Baras in hot oil until golden. Then remove from the oil and put to one side to cool.

• Soak the Dahi Baras in the water for a while. Then press lightly to squeeze out the water from the lentil dumpling.

• Dissolve the sugar in yogurt. Then add lentil dumplings/Dahi Baras.

Serving Suggestion: Garnish with Shan Dahi Bara Chaat Seasoning.

Ingredients: Red Chilli, Paprika, Salt, Coriander, Black Pepper, Cinnamon, Bay Leaf, Cumin, Brown Cardamom, Clove, Mace, Long Black Pepper, Citric Acid.
