Shan Khichra Mix for Meat, Wheat Lentil and Pulses Porridge.
Easy to cook - hard to resist!
Ingredients:
Grain Mix: De Husked and Processed Wheat Lentil Pulses, Rice
Spice Mix: Salt, Red Chilli, Paprika, Turmeric, Carom, Garlic, Coriander, Black Cumin, Nigella Seed, Star Aniseed, Cumin, Brown Cardamom, Clove, Ginger, Bay Leaves.
Recipe Idea: Khichra
500g Mutton/Chicken cubed (Breast, Shin, Chops)
500g Bones and Joints
2-3 Medium Onions finely sliced
2 tbsp Garlic Powder
2 tbsp Ginger powder
1 cup Chopped Mint Leaves
1.5 cups Ghee/Oil
1 Packet Shan Khichra Mix: 1 Sachet of Spice Mix: 1 sachet of grains, washed and soaked for 1-hour.
Steps of cooking:
1. Heat 1 cup of Ghee/Oil. Add meat, garlic, ginger and Shan Khichra 'Spice Mix'. Fry for a few minutes then add the soakedgrains and 12-15 glasses of water.
2. Simmer on a low heat for 3-4 hours or until all the ingredients are completely tender. Stir several times during cooking. Then add the chopped mint.
3. Heat the remaining ghee/oil and stir fry the onions until golden. Then pour it over the cooked Khichra. Cover and cook for a few minutes.
Serving suggestion: Serve with Julienne Ginger and Lemon Juice.
