Tomato Curry is a side dish with a twist. Currys are generally cooked and then spiced. But here the spices are mixed with the raw Tomatoes and then cooked which gives a distinct flavour. Why not try giving a zesty flavour to your boiled egg as well.

Ingredients:
Tomatoes chopped or
canned Tomatoes
- 5 to 6
Ginger
grated - 1 tsp
Garlic
grated - 1 tsp
Chilli Powder
- 1 tsp
Salt
- 1 tsp
Coriander Powder
- ½ tsp
Cumin Powder
- ½ tsp
Oil
- 4 Tbsp
Onion Seeds
- ½ tsp
Mustard Seeds
- ½ tsp
Fenugreek Seeds
- ½ tsp
Cumin Seeds
- ¼ tsp
Dried Red Chillies
- 3
Lemon Juice
for garnishing
Coriander Leaves / Cilantro
chopped for garnishing
Eggs hard boiled - 3
Method:
• Place the
Tomatoes
in a large mixing bowl. To this add the
Ginger
,
Garlic
,
Chilli Powder
,
Salt
,
Coriander Powder
and
Cumin Powder
. Mix well and set aside.
• Heat
Oil
in a pan, add the
Onion Seeds
,
Mustard
,
Fenugreek
,
Cumin Seeds
and
Red Chillies
. Stir fry for about a minute until it gives out a nice aroma.
• Next add the Tomato mixture to this Oil mixture and stir fry for about 2-3 minutes.
• Then add
Salt
, cover and cook on low heat for about 10 minutes.
• Sprinkle the
Lemon juice
.
• Garnish with
Coriander Leaves / Cilantro
and serve hot with the boiled Egg.
