Hyderabadi Butter Chicken:
Important:No need to add Salt, Garlic, Ginger, Red Chilli or anything else apart from the ingredients given below. Increase all quantities proportionally for serving more than 5 people. Follow instructions below for best results.
Ingredients: (Serves 5)
Boneless, skinless, chicken 2 inch long thinly sliced pieces - ½ kg
Onions finely diced - 180g / 3 medium sized
Cooking oil - 30ml / 2 tablespoons
Cilantro Leaves (Coriander Leaves) - 1 small bunch / 10 twigs
Mint Leaves / Pudina - 1 small bunch / 10 twigs
Yogurt / Curd - 50g
Butter - 50g
Cashew Nuts, grounded with ½ cup of water - 30g
Cream - 50g
Orange or Red Food Colour - 2 pinches
Ustad Banne Nawab's Hyderabadi Butter Chicken Masala - one packet.
Method:
• Take 50ml / half small tea cup of Water and make a paste of Butter Chicken Masala and apply to the chicken along with the grounded Cashew Nut paste and put to one side.
• Add Orange or Red Food Colour to the Yogurt/Curd mix, whip thoroughly and put to one side.
• Heat the Oil and Butter in a pressure cooker, fry Onions until they start to change colour.
• Add the Chicken and fry for 3 to 5 minutes, stirring continuously and making sure the Butter Chicken Masala paste doesn't stick to the bottom of the cooker.
• Add Yogurt/Curd to the above and cook, stirring continuously until the Yogurt/Curd is done. This process takes anywhere between 2 to 4 minutes.
• Add 250 ml / 1 glass of Water and mix thoroughly.
• Close the lid of the pressure cooker. On hearing the first whistle of the pressure cooker, turn off the cooker/ stove and let the pressure cooker cool down.
• Remove the lid and cook until the chicken is tender and the gravy becomes thick, stirring occasionally . Add cream, mix thoroughly and cook for 3 to 4 minutes. Turn off the cooker / stove, add Cilantro (Coriander Leaves) and Mint Leaves/Pudina, cover the pressure cooker and leave on the cooker/ stove for 5 minutes and serve.
