Spice Mix for Hyderabadi Chicken Manchurian

Hyderabadi Chicken Manchurian:

Important:No need to add Salt, Ginger, Red Chilli or anything else apart from the ingredients given below. Increase all quantities proportionally for serving more than 5 people. Follow instructions below for best results.

Ingredients: (Serves 5)

Chicken boneless, skinless, cut into very small pieces - ½ kg
Egg - 1
Green Chillies, finely diced - 10
Cooking oil - enough to deep fry the chicken
Garlic cloves, very finely diced / shredded - 1 large bulb / 40g
Onion, very finely diced - 60g /1 medium sized
Cilantro Leaves (Coriander Leaves) - 1 small bunch / 10 twigs
Mint leaves / Pudina - 1 small bunch / 10 twigs
Ustad Banne Nawab's Hyderabadi Chicken Manchurian Masala - one packet.

Method:



• In a bowl mix the Chicken thoroughly with 1 tbsp / 15ml of water, the contents of the masala pouch No. 1 and one whole Egg. Marinate for one hour.

• In a Kadhi (Wok), heat enough Oil to deep fry the Chicken.

• Put the marinated Chicken pieces one by one into the heated Oil and on a high flame, deep fry until the Chicken starts to change colour. This process takes between 3 to 5 minutes only because if fried for longer, the pieces will get stiff. Remove and allow the pieces to cool down.

• Mix and whip thoroughly the ingredients of pouch No. 2 in 125ml / half a glass of Water into a watery paste and put to one side.

• Transfer the Oil left over from frying the Chicken into a bowl leaving only 4 tbsp / 60ml in the Kadai (Wok) and heat.

• Add very finely diced Onion, Green Chillies and shredded/finely diced Garlic and fry for 1 to 2 minutes.

• Add the Masala Paste of pouch No. 2 and bring to the boil (for not more than about 30 seconds only).

• Add all the Chicken, finely diced Cilantro and Mint Leaves, mix thoroughly and stir fry vigorously and continuously for about 2 to 3 minutes or until the Water is completely absorbed. Remove and serve hot.

Corn Flour, Salt, Tomato, Sugar, Garlic, Red Chilli, Ginger, Tamarind, Turmeric, Papaya, Coriander, Cumin, Black Cumin, Green Cardamom, Cloves, Cinnamon.
