Method of Preparation of Chicken Masala:
Important:
No need to add Salt, Garlic, Ginger, Red Chilli or anything else apart from the ingredients given below. Increase all quantities proportionally for serving more than 5 people. Follow instructions below for best results.
Ingredients: (Serves 5)
Chicken with bones cut into 16 pieces - 1kg
Onions - 300g / 4 medium sized
Cooking Oil - enough to deep fry the onions
Green Chillies - 3 whole ones
Cilantro Leaves (Coriander Leaves) - 1 small bunch / 10 twigs
Mint Leaves / Pudina - 1 small bunch / 10 twigs
Yogurt / Curd - 250g
Ustad Banne Nawab's Hyderabadi Chicken Masala - one packet
Method:
• Heat oil and deep fry the Onions until Golden Brown. Make sure not to over fry them as they will change the colour of the curry. Remove and keep aside.
• Take 50ml / half small tea cup of water and mix in the Ustad Banne Nawab's Chicken Masala to make a curry paste. Apply evenly to the Meat and keep aside.
• In a pressure cooker take 90ml / 6 tablespoons of Oil left over from frying the Onions, add Green Chillies, Meat mixed with Masala Paste and fry for a couple of minutes stirring continuously making sure the Masala Paste does not stick to the bottom of the cooker.
• Whip the Yogurt/Curd, add to the above and cook, stirring continuously until the Yogurt/Curd is done. This process takes anywhere between 2 to 5 minutes.
• Crush the fried Onions and add to the contents of cooker and fry for 1 minute.
• Add 250ml water and mix thoroughly.
•Close lid of pressure cooker and cook on high flame. On hearing 1st whistle, reduce flame to low and cook for another 5 minutes. Remove from heat and let cooker cool down.
• Remove the lid of the pressure cooker, (and cook for another 5 minutes, only if the Chicken is not tender, stirring occasionally, otherwise) put on a low flame and add Cilantro/Coriander Leaves and Mint Leaves/Pudina. Cover, leave for 5 minutes and serve.
Notes:
• Can be cooked in Saucepan or Wok - adjust cooking times accordingly.
• Mutton or Beef can be used in place of Chicken - adjust cooking times accordingly.
• Use fresh Fried Onions only since readily available fried Onions may alter the taste and texture of the dish as they probably contain other unwanted ingredients.
• If a less spicy result is desired increase the quantity of Meat / Chicken by 100-200 grams.
