Hyderabadi Chilli Chicken:
Important:No need to add Salt, Garlic, Ginger, Red Chilli or anything else apart from the ingredients given below. Increase all quantities proportionally for serving more than 5 people. Follow instructions below for best results.
Ingredients: (Serves 5)
Boneless, skinless, Chicken cut into very small pieces - ½ kg
Egg - 1
Green Chillies diced finely - 5
Oil - enough to deep fry the Chicken
Capsicum / Bell Pepper cut into 12 pieces - 1 big / 50g
Onion cut into 12 pieces - 1 big / 125g
Cilantro Leaves (Coriander Leaves) - 1 small bunch / 10 twigs
Mint Leaves / Pudina - 1 small bunch / 10 twigs
Ustad Banne Nawab's Hyderabadi Chilli Chicken Masala - one packet
Method:
• In a bowl mix the Chicken thoroughly with only one tablespoon of water, the contents of pouch No. 1, and one Egg. Marinate for one to two hours or overnight.
• In a Kadhai (Wok), heat enough oil to deep fry the Chicken.
• Put the marinated Chicken pieces one by one into the heated oil and a high flame, deep fry until the Chicken starts to change colour. This process takes between 3 to 5 minutes only because if fried for longer, the pieces will get stiff. Remove and allow the pieces to cool down.
• Mix and whip thoroughly the ingredients of pouch No. 2 in 125ml / half a glass of Water into a watery paste and put to one side.
• Transfer the Oil left over from frying the Chicken into a bowl leaving only 4 tablespoons / 60ml in the Kadhai (Wok). Heat, add the sliced Capsicum/Bell Pepper and Onion and fry for 3 to 5 minutes or until they lose their rawness. (They should not be over or under fried).
• Add the diced Green Chillies and fry for a further 2 to 3 minutes.
• Add the watery paste of pouch No. 2, mix thoroughly and bring to the boil (for a maximum of about 30 seconds).
• Add all the Chicken, Cilantro and Mint Leaves/Pudina and stir fry vigorously and continuously until all the Water is completely absorbed. Remove and serve.
