Hyderabadi Dum Ka Chicken:
Important:No need to add Salt, Garlic, Ginger, Red Chilli or anything else apart from the ingredients given below. Increase all quantities proportionally for serving more than 5 people. Follow instructions below for best results.
Ingredients: (Serves 5)
Chicken skinless with bones cut into 16 pieces - 1kg
Onions sliced - 250g / 4 medium sized
Cooking oil - enough to deep fry the onions
Green Chillies - 3 whole
Cilantro Leaves (Coriander Leaves) - 1 small bunch / 10 twigs
Mint Leaves / Pudina - 1 small bunch / 10 twigs
Yogurt / Curd - 50g
Orange or Red Food Colour - 7 pinches
Ustad Banne Nawab's Dum Ka Chicken Masala - one packet.
Method:
• Heat the Oil, deep fry the Onions until golden brown and remove. Crush them after they have dried and put to one side.
• Whip the Yogurt/Curd, add 100ml Water, the Food Colour, Dum Ka Chicken Masala, mix thoroughly and make a paste.
• In a Kadhai (Wok), put Chicken, 90ml / 6 tablespoons of Oil left over from frying the Onions, the above paste and all the other remaining ingredients and mix thoroughly. Marinate for two hours.
• Place the Kadhai (with the Chicken pieces side by side) on a high flame on a cooker / stove, cover with a lid and cook for 10 minutes.
• Lower the flame and cook with the lid closed until the Chicken is tender. Turn the Chicken over every 10 minutes. Remove and serve.
