Spice Mix for Hyderabadi Kadhai Chicken

Hyderabadi Kadhai Chicken:

Important:No need to add Salt, Garlic, Ginger, Red Chilli or anything else apart from the ingredients given below. Increase all quantities proportionally for serving more than 5 people. Follow instructions below for best results.

Ingredients: (Serves 5)

Chicken with bones cut into 24 pieces - 1 kg
Onions cut into 16 or 20 big pieces - 100 to 125g / 2 medium sized
Onions finely diced - 160g / 3 medium sized
Cooking oil - Total 150g / 10 tablespoons
Capsicum / Bell Pepper cut into 12 or 16 big pieces - 2 medium sized
Cilantro Leaves (Coriander Leaves) - 1 small bunch / 10 twigs
Mint Leaves / Pudina - 1 small bunch / 10 twigs
Ustad Banne Nawab's Kadhai Chicken Masala - one packet.

Method:

• Take 50ml / half a small tea cup of Water and make a paste with the contents of the Kadhai Chicken Masala, apply to the Chicken and put to one side

• In a pressure cooker, heat 105ml / 7 tablespoons of Oil and fry finely diced Onions until they start to change colour.

• Add Chicken mixture and fry for 3 to 5 minutes, stirring continuously making sure the masala paste does not stick to the bottom of the cooker.

• Add half a glass / 125ml of Water to the above, mix thoroughly, close the lid of the pressure cooker and cook on a high flame until the first whistle is heard.

• Reduce the flame to the lowest and cook for 5 minutes only. Turn off the cooker / stove and let the pressure cooker cool down.

• Heat 45ml / 3 tablespoons of cooking Oil in a Kadhai (Wok) and fry big Onion pieces and Capsicum / Bell Pepper pieces for about 3 to 5 minutes until their rawness is gone.

• Transfer the contents of the pressure cooker into the Kadhai and cook on a high flame until the chicken is tender and a thick gravy is obtained, stirring occasionally.

• Turn off the cooker / stove and garnish with Cilantro.

Tomato, Salt, Red Chilli, Coriander, Cumin, Garlic, Ginger, Turmeric, Green Cardamom, Black Cumin, Cinnamon, Cloves, Nutmeg, Mace, Fenugreek Leaves, Black Cardamom.
