Hyderabadi Kadhai Goshth:

Important: No need to add Salt, Garlic, Ginger, Red Chilli or anything else apart from the ingredients given below. Increase all quantities proportionally for serving more than 5 people. Follow instructions below for best results.

Ingredients: (Serves 5)

Meat with bones - ½ kg
Onions cut into 8 or 10 large pieces - 70 to 80g/ 1 large sized
Onions finely diced - 100g / 2 medium sized
Cooking Oil - 105ml / 7 tbsp
Capsicum / Bell Pepper cut into 8 or 10 large pieces - 85 to 95g / 1 large sized
Cilantro Leaves (Coriander Leaves) - 1 small bunch / 10 twigs
Ustad Banne Nawab's Kadhai Goshth Masala - one packet.

Method:

• Take 50ml / half small tea cup of Water and make a paste with the contents of the Kadhai Goshth Masala, apply to the Meat and put to one side.

• In a pressure cooker, heat 75ml / 5 tablespoons of Oil and fry 2 medium, finely diced Onions until they start to change colour.

• Add Meat mixture and fry for 3 to 5 minutes, stirring continuously & making sure the Masala Paste does not stick to the bottom of the pressure cooker.

• Add half a glass / 125ml of Water, mix thoroughly, close the lid of the pressure cooker and cook on a high flame until the third whistle.

• Then reduce the flame to the lowest and cook for about 15 minutes.

• Turn off the cooker and let the pressure cooker cool down.

• Heat 30ml / 2 tablespoons of cooking Oil in a Kadhai (Wok), add the large Onion pieces and the Capsicum / Bell Pepper pieces and fry for about 3 to 5 minutes until their rawness is gone.

• Now transfer the entire contents of the pressure cooker into the Kadhai and cook on a medium to high flame until the Meat is tender and the Gravy becomes thick, stirring occasionally.

• TRemove from heat and garnish with Cilantro Leaves and serve.

Tomato, Salt, Red Chilli, Garlic, Coriander, Cumin, Ginger, Turmeric, Green Cardamom, Black Cumin, Nutmeg, Mace, Fenugreek Leaves, Big Cardamom, Cinnamon, Cloves.

Vegetarian, Halal.
