Important:
No need to add Salt, Garlic, Ginger, Red Chilli or anything else apart from the ingredients given below. Increase all quantities proportionally for serving more than 5 people. Follow instructions below for best results.
Ingredients: (Serves 5)
Meat with Bones - 500g
Onions Sliced - 225g
Cooking Oil - Enough to deep fry onions
Fresh Coriander - 10 twigs
Mint Leaves - 10 twigs
Green Chillies - 3 (whole)
Ustad Banne Nawab's Hyderabadi Mutton Curry Masala - 1 packet
Method:
• Heat oil and deep fry the Onions until Golden Brown. Make sure not to over fry them as they will change the colour of the curry. Remove and keep aside.
• Take 100ml one small tea cup of water and mix in the Ustad Banne Nawab's Hyderabadi Mutton Curry Masala to make a curry paste. Apply evenly to the Meat and keep aside.
• In a pressure cooker take 90ml / 6 tablespoons of Oil left over from frying the Onions, add Green Chillies, Meat mixed with Masala Paste and fry for a couple of minutes stirring continuously making sure the Masala Paste does not stick to the bottom of the cooker.
• Crush the fried onions and add to the contents of cooker and fry for 1 minute.
• Add 875ml water and mix thoroughly.
•Close lid of pressure cooker and cook on high flame. After 3rd whistle, reduce flame to low and cook for 5 to 10 minutes. Remove from heat and let cooker cool down.
• Remove lid of pressure cooker, cover it with a plain cover and on medium to low heat, cook till meat is tender and gravy is of desired thickness (neither too thick nor too thin), stirring occasionally. (This process takes anywhere between 15-25 minutes).
• Reduce flame to low, add Fresh Coriander and Fresh Mint Leaves, cover and cook for another 5-minutes or so and serve.
Notes:
• Can be cooked in Saucepan or Wok - adjust cooking times accordingly.
• Chicken or Beef can be used in place of Mutton - adjust cooking times accordingly.
• Use fresh Fried Onions only since readily available fried Onions may alter the taste and texture of the dish as they probably contain other unwanted ingredients.
• If a less spicy result is desired increase the quantity of Meat / Chicken by 100-200 grams.
