Hyderabadi Mutton Curry:
Important: No need to add Salt, Garlic, Ginger, Red Chilli or anything else apart from the ingredients given below. Increase all quantities proportionally for serving more than 5 people. Follow instructions below for best results.
Ingredients: (Serves 5)
Meat with bones - ½ kg
Onions sliced - 225g / 4 medium sized
Cooking Oil - enough to deep fry the Onions
Cilantro Leaves (Coriander Leaves) - 1 small bunch / 10 twigs
Mint Leaves / Pudina - 1 small bunch / 10 twigs
Green Chillies - 3 whole
Ustad Banne Nawab's Hyderabadi Mutton Curry Masala - one packet.
Method:
• Heat the Oil, deep fry the Onions until golden brown, making sure they are not over-fried as this will change the colour of the Curry. Remove and put to one side.
• Take 100ml / one small tea cup of Water, make a paste of Curry Masala, apply evenly to the Meat and put to one side.
• In a pressure cooker, take 90ml / 6 tablespoons of Oil left over from frying the Onions, add Green Chillies, Meat mixed with Masala Paste and fry for a couple of minutes, stirring continuously and making sure the Masala Paste does not stick to the bottom of the pressure cooker.
• Crush the fried Onions, add to the contents of the pressure cooker and fry for 1 minute.
• Add 875ml Water and mix thoroughly.
• Close the lid of the pressure cooker and cook on a high flame. Once the third whistle is heard reduce the flame to low and cook for 5 to 10 minutes, remove from the heat flame and let the pressure cooker cool down.
• Remove the lid of the pressure cooker and cover with an ordinary lid. Cook on a medium to low flame until the meat is tender and the desired thickness of the Curry is obtained (neither too thick nor too thin), stirring once or twice. (This process takes anywhere between 15 to 25 minutes). Reduce the flame to low , add Cilantro and Mint Leaves, cover and cook for approximately another 5 minutes and serve.
