Vegetable Pulao

Vegetable Pulao is nothing but a mixture of spicy Vegetables in Basmati Rice. This is generally served as a main course item along with some Raita and Popadums.

2 to 4

Ingredients:

For the rice:
 
  Basmati Rice - 1 cup  
  Water - 2 cups  
  Oil - 2 tbsp
 
  Cumin Seeds - 1 tsp
 
  Bay Leaves - 2
 
  Salt - 1 tsp
 
  Oil for cooking
 
 
 
  For the Vegetables:
 
  Oil - 3 tbsp  
  Cumin Seeds - 1 tsp  
  Potato chopped into small cubes - 1  
  Carrot chopped - 1  
  Cauliflower cut into small florets - 1 cup  
  Green Peas fresh or frozen - 1 cup  
  Red Peppers chopped - ½  
  Green Chillies split lengthwise - 2  
  Ginger grated - 1 tsp  
  Salt - 1 tsp  
  Garam Masala - ½ tsp  
  Lemon Juice - 1 tbsp  
  Chopped Cilantro (Coriander Leaves) for garnishing  

Method:

Preparing the Rice:

• Heat Oil in a pan, add Cumin Seeds - after the Cumin Seeds crack add Bay Leaves and fry for few seconds.

• Then add the Rice and stir fry for a minute or two.

• Add Water and Salt, bring it to boil and reduce the heat to low. Cover and cook for about 15 minutes or until the Rice is tender and all the Water has evaporated.

• Next turn off the heat and check the Rice with a fork.

Preparing the Vegetables:

• Heat Oil in a pan, add the Cumin Seeds and allow it to crack. Add Potatoes and stir fry them for about 2 minutes.

• Add Cauliflower and Carrots - let them cook for about 3 minutes, stir occasionally.

• Next add Green Peas, Peppers, Ginger and Green Chillies. Mix well and allow it to cook till tender.

• Next turn off the heat and add Garam Masala and Lemon Juice.

• Gently fold the Rice into the Vegetables. Garnish with chopped Coriander Leaves and serve with Raita!
