1 medium Cauliflower, cut into florets

| ||120g frozen Peas|| |
| ||2 tbsps Sunflower/Vegetable Oil|| |
| ||2 tomatoes, diced|| |
| ||Salt to taste|| |
| ||Green Chillies - 1 tsp chopped|| |
| ||Garlic - 2 tsp crushed|| |
| ||Pinch of Ginger - 1½ tsp chopped|| |
| ||Fresh Coriander - handful|| |
| ||Curry Cuisine - Aloo Gobi Matar - 1 pack|| |
• Place the Oil in a pan and heat. Add the Cauliflower and Potatoes and stir. Keep over a medium heat.
• Add the Garlic, Ginger, Green Chillies and Curry Cuisine Aloo Gobi Matar Spice Mix, stir and cook for a few minutes.
• Add the fresh Tomatoes, Coriander and Peas, and stir.
• Cover and cook over a low heat until the vegetables are cooked (15-20 minutes).
Serve with Chapattis or as a side dish.
