Amoy Hoi Sin (Barbeque) Sauce is a Cantonese speciality, widely used in Chinese cooking. It is an essential marinade in classic dishes such as Canonese Roast Duck, Char Siu Roasted Pork, and Barbequed Pork Spare Ribs. It is also delicious with chicken and seafood.

You will also recognise Hoi Sin Sauce as many restaurants serve it with the famous PekingDuck.

Ingredients: Sugar, Fermented Salted Soyabean (Soyabean, Wheat Flour, Salt, Water), vinegar, Water, Colour: E150a, Garlic, Salt, Sesame Oil, Chilli.

Chicken & Cashew Nuts in Hoi Sin Sauce:

200g Chicken breast, cubed
25g roasted cashew nuts
1 tbsp cooking oil
1/2 red pepper (approx. 60g) sliced or cubed
1 tbsp Amoy Hoi Sin Sauce
1 tbsp Amoy Sesame Oil
2 tbsp water

• Blend the Hoi Sin Sauce with water and Sesame Oil in a cup.

• Heat a wok with the cooking oil and add the chicken to stir-fry for approx. 2 minutes.

• Add all remaining ingredients, except the cashew nuts, and stir-fry until the chicken is fully cooked (approx. 3-4 minutes).

• Add the cashew nuts and stir just before serving. Serve on a bed of rice or Amoy Egg Noodles.

Once opened, use immediately or remove the contents from the can, keep refrigerated and use within one month.
