    Ingredients:

    Dried Linguine - 200g
     
     Tinned Anchovy Fillets, roughly chopped and oil reserved - 50g
     
     Mixed Seafood (eg Prawns, Squid, Mussels, Octopus) - 100g
     
     Parmesan Cheese, grated - 20g
     
     Ground Black Pepper - ¼ tsp
     
     Olive Oil - ½ tsp
     
     Sea Salt - to taste
     
     Keralan Lemon Pickle - 2 tbsps
     

    Method:

    • Cook the linguine with the salt as per packet instructions.

    • Whilst the pasta is cooking, heat a frying pan over a high heat. Add the oil reserved from the anchovies, then the anchovies, mixed seafood and Keralan Lemon Pickle. Stir constantly for 30 seconds then add the pasta using tongs so that some of the cooking water is also added as it will keep the ingredients from sticking to the pan.

    • Divide between two plates, twirl it and serve as high as you can to keep the heat in the pasta.

    • Sprinkle over the grated Parmesan cheese, add a grind of freshly ground black pepper and a drizzle of olive oil. Enjoy!
