| | | Mixed Seafood (eg Prawns, Squid, Mussels, Octopus) - 100g
| | | Parmesan Cheese, grated - 20g
| | | Ground Black Pepper - ¼ tsp
| | | Olive Oil - ½ tsp
| | | Sea Salt - to taste
| | | Keralan Lemon Pickle - 2 tbsps
| | Method: | • Cook the linguine with the salt as per packet instructions.
• Whilst the pasta is cooking, heat a frying pan over a high heat. Add the oil reserved from the anchovies, then the anchovies, mixed seafood and Keralan Lemon Pickle. Stir constantly for 30 seconds then add the pasta using tongs so that some of the cooking water is also added as it will keep the ingredients from sticking to the pan.
• Divide between two plates, twirl it and serve as high as you can to keep the heat in the pasta.
• Sprinkle over the grated Parmesan cheese, add a grind of freshly ground black pepper and a drizzle of olive oil. Enjoy!
