The South Western state of Kerala is famed for its abundance of coconut trees and its spice gardens. The region has a truly fantastic cuisine which builds on the wealth of local ingredients and is influenced in equal measure by its Hindu, Christian and Muslim communities.

Spice Tailor's Keralan Coconut Curry is flavoured with curry leaves and mustard seeds, and soured with tomatoes and tamarind, for a true classic. It is smooth and creamy with just the right amount of spice but not cloying or heavy and works really well with duck, pork or mixed vegetables. Or add some rice noodles into it for a one-pot meal.

The Spice Tailor range is truly versatile. Simply take your pick from the bits to buy, add the specially selected spices, stir in the sauce and you have a fresh, authentic Indian meal in just 10 minutes. Anjum x
It's so Simple!

Bits to Buy:

• 250-275g firm white fish (or prawns, chicken, vegetables or eggs), cut into generous pieces

From your Cupboard:

• 1 tsp vegetable or olive oil

Preparation:

• Heat 1 tbs oil in a pan, add the spices and cook for 20 seconds.

• Add in any meat or prawns and brown gently for 2 minutes.

• Stir in the sauce and 50ml water and bring to the boil. Add the fish or other delicate ingredients and simmer until they are cooked through.

• Serves 2-3 with rice or parathas...

To Tailor To Taste:

• Try fish steaks for a fuller flavour.

• Also great with shellfish such as mussels or prawns, chicken, duck or hard-boiled eggs.

• Make with seasonal vegetables and rice noodles for a great vegetarian meal.

• Add a handful of halved baby tomatoes for a change.

• Finish the curry with a little roasted, flaked coconut.

• Add a little vinegar, tamarind or lime juice for added tang.
