Shredded Carrot Salad can be called as an Indian Salad. This is a nutritious Salad that can be prepared in a delicious way. This can also be called as Weight Watchers food ;). It can be eaten as is or accompanied with plain Rice and hot Rasam!

Ingredients:

Grated Carrot - 2 Cups
 
 Freshly grated Coconut - 1 Cup
 
 Oil - 1 tbsp
 
 Mustard Seeds - 1 tsp
 
 Bengal Gram (Chana Dal) - 2 tsp
 
 Black Gram (Urad Dal) - 2 tsp
 
 Turmeric Powder - ¼ tsp
 
 Pinch of Asafoetida
 
 Green Chillies chopped - 2
 
 Curry Leaves - 5 to 6 leaves
 
 Salt to taste
 
 Coriander Leaves (Cilantro) chopped for garnishing
 
 Lime Juice - 2 tbsp
 

Method:


• Place grated Carrot, grated Coconut in a mixing bowl.

• Heat Oil in a pan, add Mustard Seeds, Bengal Gram, Black Gram, Turmeric Powder, Asafoetida, Green Chillies and Curry Leaves. Fry for few seconds.

• Add this tempering to the Carrot mixture along with some Salt and mix well.

• Garnish with Lime Juice and Coriander Leaves and serve.
