Dufrais Sauvignon Blanc Vinegar is made in the traditional way by naturally fermenting and maturing the white wine. This fine vinegar (acidity 6%) has a delicate flavour, ideal for use in salad dressings, marinades and sauces.
• 120ml olive oil
• 1 small red onion, finely chopped
• 60ml Dufrais Sauvignon Blanc vinegar
• 1 tbsp wholegrain mustard
• 2 tbsp fresh chopped parsley
Heat a little of the oil in a small pan and fry the onion until softened. Add the remaining oil and ingredients and whisk together. Use to pour over hot new potatoes and other baby vegetables.
For other delicious variations, try adding garlic, sesame or poppy seeds, or a selection of herbs.
