Ingredients: Aubergines (97%), Salt, Vinegar, Citric Acid, Liquid Smoke.
This speciality has been prepared from premium aubergines (eggplants) that have been slowly roasted, then peeled and pureed.
Recipe for traditional Baingan Bharta:
1 tin Roasted Aubergine Puree 1 large onion, chopped 400g tin chopped tomatoes 1 tsp ground coriander 1 tsp ground cumin 1 tsp chilli powder 1 tsp garam masala Salt to taste Oil for frying
Stir fry the onions in oil for 3 minutes until lightly browned then add the tomatoes.
Squash well and stir until the mixture is smooth.
Add the spices and the tin of roasted aubergine.
Stir well, bring to the boil, then simmer for approximately 15 minutes.
Serve with naan bread or chapattis.
