Greens form an important portion of our daily intake. The veggies in this soup not only makes it tasty but also is filled with nutrition. As it's a thick soup, it can be served hot with some bread for a filling lunch or as a starter for cool evenings. |

Ingredients: | Vegetable stock - 500ml | |
| Spring Onions, trimmed and sliced - 3 | |
| Garlic Cloves crushed - 2 | |
| Frozen Peas - 225g | |
| Celery chopped - ½ cup | |
| Roughly chopped Spinach - 125g | |
| Single cream - 100ml | |
Method: | • Place the Stock, Spring Onions and Garlic in a pan. Add Salt and Pepper to this, cover and bring this to boil.
• Boil until the Onions are soft, then add the Peas and Celery and continue to boil on high heat. Once the mixture comes to boil remove the lid.
• After a minute, add Spinach and further boil for 1-minute until the leaves are just tender.
• Next add the Cream and blend immediately. Add the seasoning according to your choice and serve. |
