This authentic Black, Hard Anodised Kadai is made from highly conductive aluminium.
For the cook this means cooking in a pot that is more fuel efficient, scratch resistant, with a surface that will not peel or chip.
The heavy gauge aluminium used allows even distribution of heat on the bottom and up the sides of the pots with no hot-spots. The surface does not interact with or alter the taste of food.

Hard anodised aluminium cookware is NOT a coating, but an integral part of the metal, built up molecule by molecule to a thickness of 30mm by a carefully controlled electrochemical process. The aluminium on each Kadai is 3mm thick
Handles on No 8 & No 16 are very slightly different from picture.
As a guide, the No 16 Kadai is a similar size to a 12" wok.
To get the most from your Kadai: Before using your Kadai for the first time, wash, rinse and dry thoroughly
The Kadai is not a non-stick pan
Never heat the Kadai when it is empty
Do not put a hot Kadai under the cold tap
Take care not to drop the Kadai or bang its rim
Ensure that the handle of the Kadai does not extend over another gas burner or heated surface
The Kadai is not dishwasher-safe
Do not use the Kadai to store food
