Aloo Bhaji - Spicy Potato Curry
Ingredients: Salt, Red Chilli, Nigella, Turmeric, Garlic, Coriander, Cumin, Mustard Seeds, Fennel, Carom, Clove, Black Pepper, Green Cardamom, Fenugreek Seeds and Leaves, Citric Acid, Maltodextrin, Hydrolyzed Soy Protein, Cane Sugar, Canola Oil, Silicon Dioxide, Dried Mango Powder.

Recipe Suggestions:

Aaloo Bhaji - Spicy Potato Curry

1kg Potato, thin round slices
125g Tomatoes, diced
3 Green Chillies, chopped
3 tbsp Green Coriander, chopped
1 packet Shan Aaloo Bhaji mix

• Mix together 4-5 glasses water with potatoes, tomatoes and Aaloo Bhaji mix. Boil on a medium heat until the potatoes are tender, stirring occasionally.

• Add the green chillies and coriander.

• Stir roughly to break up some of the potatoes before serving.

Serve with hot Purees and Pickles.

Recipe for Chanay ki Bhaji - Chickpea Curry

300g Chickpeas, soaked for 2-3 hours (or Tinned Chickpeas)
150g Onions, sliced
200g Tomatoes, diced
3 Green Chillies, chopped
3tbsp Coriander, chopped
75g Ghee/Oil
1tbsp Bicarbonate Soda
1 packet Shan Aaloo Bhaji mix

• Boil the soaked chana in 4-5 glasses water for 2-3 hours. Add the bicarbonate of soda and cook for another hour until the chickpeas are tender.

• Heat the ghee and fry the onions until golden brown.

• Add the boiled chickpeas, tomatoes, Aaloo bhaji mix, and desired quantity of water for gravy.

• Boil on a high heat for 15-20 minutes. Add the green chillies and coriander.

Serve garnished with Chana Chaat Masala and lemon juice.
