|Lentil Dumplings in Yogurt|
500g yogurt, sieved and chilled
500g ghee or oil, for deep frying
1tbsp icing sugar
Shan Dahi Bara Mix
• Mix 175mls luke warm water with the Dahi Bara mix to make a smooth batter and set aside for 15 minutes.
• Heat the ghee/oil and add a few tablespoons of the batter and fry until light golden brown. Remove from the oil and allow to cool.
• Refry the dumplings in hot ghee/oil until dark golden brown, remove and again allow to cool. Then soak in lukewarm water for 10-15 minutes. Drain and gently squeeze to remove excess water.
• Add the icing sugar to the cold yogurt and stir until the sugar has completely dissolved. Add the dumplings and serve, garnished with the Chaat mix.
