Stir Fried Meat with Brain, Heart and Kidney
2 goat kidneys 1 goat heart 2 goat brains 3 mutton chops
Add 2 tbsp vinegar to boiling water and blanch the above ingredients for 2-3 minutes, drain and chop into small cubes
1 onion, sliced 2 tomatoes, sliced 50g garlic, crushed 50g ginger, crushed 5-10 green chillies, coarsely chopped 1 bunch coriander, chopped 2-3 tbsp lemon juice 50g yogurt, beaten 200g ghee/oil 1 packet Kat-a-Kat Curry Mix (use less for a milder dish)
• In a pot, mix together the chopped kidneys, hearts, chops, ginger, garlic, Kat-a-Kat Curry mix and 1/2 cup water. Cover and cook on a low heat for 10 minutes. • Add the oil, onions, yogurt, tomatoes, coriander, green chillies and the brains. Stir fry over a high heat fro 10 minutes, stirring continuously. • Add the lemon juice and serve with naan or chappatis. |
